Elysian Springs is a 160-acre estate perched at 2920 Eden Valley Road, Mount Pleasant — the northernmost vineyard in the Adelaide Hills and the birthplace of the River Torrens. Originally established by the Seppelt family in 1984, the vineyard now employs biodynamic and organic practices across its plantings of Pinot Noir, Chardonnay, Shiraz, Sauvignon Blanc, Pinot Gris, Grenache, Cabernet Sauvignon and Prosecco. No formal certification is stated, but minimalistic, low-intervention viticulture is central to the estate's philosophy. The cellar door is open Wednesday to Sunday (11am–5pm, closing 4pm Wed–Thu) and offers winery tours, vineyard tours, food-and-wine matching and cooking classes.
